PREP TIME: 5 minutes | COOK TIME: none | SERVES: 3-5
- 1 chilled seedless watermelon
- 1/4 cup of loosely packed fresh mint leaves
- 1/2 a lime
- Ice cubes (optional)
- Cut watermelon in cube size pieces
- Add to high-speed blender, mine was filled to the max, about 8 cups
- Add-in the fresh mint leaves (use +/- depending on taste buds)
- Blend on high speed until it reached a smooth consistency
- Squeeze-in lime juice (use +/- depending on taste buds)
- Blend on slow speed to mix-in the lime juice
- Add ice cubes to serve (optional) and store leftovers in the refrigerator for 2-3 days.

If your watermelon has seeds (the black/dark brown ones), I recommend removing them prior to making this recipe. The darker seeds can give the juice a bit of a bitter taste. The white seeds are totally fine and in fact are quite nutritious. I also suggest that your watermelon be chilled, if it’s not add in some ice cubes to make it nice and cold. Once all blended, it yielded approximately 5 1/2 cups of juice.
